Ingredients

1 (15.5 ounce) can chickpeas, drained and rinsed

1 cup cucumber, diced

1 ½ cups tomatoes, diced

1 tablespoon mint, chopped

½ tablespoon Wildtree Mediterranean Dry Rub

1 tablespoon balsamic vinegar

4 boneless, skinless chicken breasts (about 1 ½ pounds)

1 tablespoon Wildtree Hickory Smoked Grapeseed Oil

1 ½ tablespoons Wildtree Rodeo Rub

Method of Preparation

Lightly mash chickpeas in a bowl, keeping many whole. Add the cucumber, tomato, mint, Mediterranean Dry Rub, and balsamic vinegar. Refrigerate until you are ready to serve. Preheat grill or grill pan to medium high. Mix together the Hickory Smoked Grapeseed Oil and Rodeo Rub and rub all over the chicken breasts. Cook chicken breasts on both sides until browned and completely cooked through (165°F). Remove chicken from grill and rest before slicing. Serve chicken with prepared salad. Top with feta cheese if desired.

They are so much fun and easy to work with.  I think the most difficult aspect is making sure your layout isn’t too busy or that the doodles get lost in the page.  This scrapbook page I just completed features doodles from Wish Bliss Studio at After 5 Designs.  I also threw in a cute, doodled banners – banners are also trending right now.

Sometimes, deciding what to scrapbook can prevent you from actually scrapbooking.  Looking at years and years of photos can leave a scrapbooker at a loss as to where to start.  My new mantra – JUST START ANYWHERE! I am not going to scrapbook chronologically – it is too restrictive.  I imported several photo folders into Lightroom and I just previewed a general imported file when I came across these wonderful photos of Matty & I from 2003.  As I am usually the photographer, there aren’t that many photos of me.  By taking self-portraits, I was able to capture a special moment between myself and my son.  I also don’t believe in using every photo either.  Just pick the ones that speak to you or tell a story.

From the Nassau County website:

  • A swimming complex (fee required) includes an Olympic-sized main pool, a diving pool, a “kiddie” pool, training pool, an interactive water-play area and two water slides (30 foot). In December 2006, the pool at Wantagh Park was named “Best Public Pool on Long Island ” byLong Island Press, the weekly newspaper. The pool will open on June 27, 2010, and remains open through Labor Day.
  • The pool complex includes various conveniences, including lockers, showers, a concession stand, and lounge and deck chairs.
  • Hours: Mon.-Sun., 10 a.m. – 6 p.m.
  • Fees (daily): resident adult, $7; resident child (4-17 years of age), $5; resident senior, disabled, vol. firefighter, ambulance corps auxiliary police, veterans, $3; non-resident adult, $25, non-resident senior & child, $19. ALeisure Pass is required for residents to receive the resident rate. Seasonal passes are also available for residents with Leisure Passes, with rates as follows: families ($225); individuals ($90); and seniors ($50).

 

The slides are magnificent! The kids really love them and as long as the line isn’t too long, will go up and down over and over again (last week one slide was closed).  The interactive water park was a big hit with my son, Ryan – he could play there happily for hours.  We have a great mix of kids as well – one of the moms formed a facebook group for our “Camp” – Camp ScarVilla – a mash up of Jen & Gina’s last names as the founder of the Camp last year.  So throw a little tech into the mix and everyone knows what the camp is meeting up. Last week, at one point, we had 24 kids at the pool!!!

Now the only fly in the ointment (ugh I know – something my mom used to say) is that there is a rule – no cameras or video on the pool deck.  You won’t find it on the County website either – just a green sign posted on the fence outside.  We were dismayed – taking pictures is a major part of how we document our summer. We managed to sneak a few pictures anyway. Who ever heard of a camera ban rule at a County park??? I can imagine what precipitated it – some jerk teen taking pix of people and posting it on facebook to make fun of someone.  Thanks a lot jerk!!!

“I don’t need to take a shower – I was in the pool”

Sorry Junior, you still need soap – chlorine, kid pee and whatever else is floating around in the pool is no substitute!

 

“Its light out – I can’t go to bed!”

I don’t give a damn if it is light out 24/7 like Alaska – your bedtime is 9pm and it doesn’t change because the days are longer now.

 

“I get tan so I don’t need sunscreen”

This one goes for you adults also – just because you tan doesn’t mean that you aren’t exposing yourself to possible skin cancer.  Remember, a tan is actually a sign of sun damage.  Put on that sunscreen!

Summer Camp on Your Child’s List This Summer? Make It a Blast! http://longislandchick.com/summer-camp-on-your-childs-list-summer-make-blast/ http://longislandchick.com/summer-camp-on-your-childs-list-summer-make-blast/#respond Sun, 12 Jun 2011 17:51:13 +0000 http://longislandchick.com/?p=1560 ‘Tis the season where families get ready to send their children off to summer camp.  It is a time of great excitement but also can be a time of great anxiety for both parents and children.  Even kids who aren’t particularly anxious often get a little nervous as this summer event approaches.  Before the great send off takes place, try some of these tips to make your child’s experience one to remember (in a positive way):

Practice

If you child has never been separated from you, it is a good idea to practice – shorter term sleepovers or a night at Grandmas for some rehersal.

Involvement

Involve your child as much as possible in all phases, big and small, of the process from camp selection to choosing activities. This gives your child the feeling that he is in control and allows him to formulate expectations.

Create Excitement

Help your child get excited about camp by taking her shopping for new gear and focusing her on all the fun things about camp.

Share Your Experiences

Reflect on your own camp experiences and share the positive experiences with your child.  Show that you are willing to talk about the new things he’ll be doing, whether it’s sharing a bathroom, getting along with cabin-mates, or choosing a partner at a square dance.

First Day

  • Keep the good-byes short. Difficult as it may be to peel a crying, clinging child off your leg and walk out the door quickly, it’s the best strategy. Lingering just delays the agony for your child (just like pre-school or daycare).
  • Be a role model for your child and model your confidence!  Make it clear you understand that being away from home can be scary, but show that you are confident your child will do okay. Kids pick up anxiety from parents, so if you’re anxious, they will be too.
  • Focus on the positive! Reassure your child by reviewing all of the good things about camp. Talk to your child about what he will do and learn over the summer. Remember, camp is about learning new things and meeting new people, all of which builds a child’s self-confidence.

Communication During Camp

Make communication easy for your child. Pack envelopes and stamps, create a tentative schedule for phone calls or emails (if allowed), and make sure your child understands how easy it will be. Send regular post cards and care packages to your child.  There is nothing better than getting something in the mail while you are away at camp!

And For the Parents

First, be sure that you feel comfortable in the camp you have selected. Call the director a few times with in the first week to make sure your child is doing well. Now that you have no safety reason to worry it time to try and move on.

  • Enroll in a special interest class. While your kid is away learning something new during the summer break, you too could take advantage of the opportunity to enroll in a personal interest class such as cooking classes or yoga courses. Whatever your preference might be, there is an available adult summer class for you.
  • Date Night ! Try to go out for a nice dinner and see a movie.
  • Learn a hobby. You could learn how to do cross-stitching, baking, photography, or other things that interests you.
  • Finish or start reading your piles of books and finish watching your tons of DVDs . Nothing beats days of lazily doing nothing in the house and just being a couch potato.
  • Pamper yourself for a day in the spa and a stroll in the mall to shop. Surely, you won’t really be depressed if you experience the things you love, right?
